Easy Chocolate Chip Oatmeal Zucchini Cookies Recipe: Yes, Please by Donna John

Even if you're not growing zucchini in your summer garden, it's hard to resist those bins at the grocery store and farmers market. Most of the time I cook side dishes with my fresh zucchini, but this year I've tried quite a few dessert recipes with the squash. This soft, moist, chocolatey zucchini oatmeal cookie was the last recipe I made, and it was a success.

These easy cookies are full of oatmeal, grated zucchini and other sweet ingredients – and they're really easy to prep and bake. Here is what you need to grab to make these oatmeal cookies: quick oats, all-purpose flour, cocoa powder, baking soda, salt, ground cinnamon, brown sugar, butter, an egg, vanilla extract, fresh zucchini and chocolate chips.

These cookies bake up quickly and are soft and loaded with oatmeal, sweet zucchini and pockets of melty chocolate. But surprisingly, they are not an overly sweet cookie. These cookies are just the right amount of sweet. Serve these zucchini cookies as a snack or even for dessert with a cup of coffee.

Ingredients

• 2 cups quick oats
• 2/3 cup all-purpose flour
• 2 tablespoons cocoa powder
• 1/2 teaspoon baking soda
• pinch of salt
• 1/2 teaspoon ground cinnamon
• 1/2 cup brown sugar, packed
• 1/2 cup (1 stick) butter, melted and cooled slightly
• 1 egg
• 2 1/2 teaspoons vanilla
• 1 1/2 cups grated zucchini, squeezed dry with paper towels
• 1 cup semisweet chocolate chips, plus more for topping, if desired

Recipe Notes

• You can add a few more chocolate chips to the top of the slightly flattened cookies before baking.

• Ovens vary, so keep an eye on the cookies. You do not want to overbake.

• Instead of semisweet chocolate chips, try milk chocolate or dark chocolate chips.

• Be sure to squeeze excess moisture from the grated zucchini with a paper towel.

Here's how to make it: 

1. Whisk together the oats, flour, cocoa powder, baking soda, salt and cinnamon in a mixing bowl.
   
   
2. In another bowl, whisk together the melted butter, egg, vanilla and brown sugar.
   
3. Add the wet ingredients to the dry ingredients.
   
4. Fold in the grated zucchini and chocolate chips.
   
5. Form golf ball-size balls of the dough and put onto parchment paper-lined baking sheets. Press gently to flatten slightly and top with a few more chocolate chips, if desired.
   
6. Bake in a preheated 350-degree F oven for about 12 to 15 minutes, or until center is set.
   
7. Remove the cookies a cool a couple minutes before removing from the baking sheet to cool completely.
